Objectives

Narrative objectives1

Even when the same amount of carbohydrate energy is consumed, for example in the form of white rice or bread, postprandial glycemic responses may differ depending on how the carbohydrate is consumed. For instance, consuming vegetables (dietary fiber) before carbohydrate intake has been reported to attenuate postprandial increases in blood glucose levels. In contrast, the effects of beverage consumption after carbohydrate intake, particularly the presence or absence of beverage consumption and the timing of ingestion, on postprandial glycemia, gastric emptying, and sensations of satiety and hunger remain incompletely understood.
The present study aims to investigate, in young healthy adults, the effects of beverage consumption, including green tea and water, and the timing of beverage ingestion on postprandial gastric emptying, blood glucose responses, and subjective sensations of satiety and hunger following a single meal of white rice.
This study is expected to provide scientific evidence regarding how white rice may be consumed in relation to beverage intake, taking into account postprandial glycemic responses and gastric emptying. In addition, the findings may contribute to a better understanding of the mechanisms underlying gastric sieving of mixtures of solid food and liquids.

Assessment

Primary outcomes

We performed a randomized crossover study in 11 healthy women. Four experimental conditions were tested on separate days: 150 g of white rice alone (rice); 150 g of white rice followed immediately by 200 mL of water (immediate water); 200 mL of water consumed 15 min before rice (water 15 min before); and 200 mL of water consumed 30 min after rice (water 30 min after). After rice consumption, postprandial glucose was measured, and breath samples were collected for 120 min to evaluate gastric emptying using a (1-13C)-labeled sodium acetate breath test.
