In the plant-based diet trial, cfPWV was significantly lower in the 120 min after the meal than before the meal (P<0.05). In addition, FMD was significantly higher in the 120 min after the meal than before the meal (P<0.05). There was no change in cfPWV and FMD between before and after intake in participants in the animal-based diet trial. Maximal oxygen uptake was significantly higher in the plant-based diet trial than in the animal-based diet trial (P<0.05).

Eleven healthy adult males participated in this study.
In the initial phase of the experiment, 14 participants were enrolled in this study. However, during the course of the study, 3 participants dropped out, resulting in a final participation of 11 individuals.
